
FACTS ABOUT MAPLE PRODUCTION AT LA GOUDRELLE MAPLE SUGAR SHACK
Two trees can produce maple products, the Red Maple and Sugar Maple. The pronounced maple taste is produced and accentuated by boiling down the sap at a controlled temperature until you obtain maple syrup.
It takes 40 litres of maple sap to produce 1 litre of maple syrup.

First, you must calibrate your thermometer.
Your thermometer in boiling water should read 100 Celsius; if not take note of the temperature. -
To produce maple syrup:
Bring the sap 4o Celsius above boiling water ex: in this case 100 + 4 = 104 Celsius. -
To obtain the following products. Continue to boil the maple syrup to the following temperatures:
Maple butter: add 110.5 Celsius above boiling water
Maple toffee: add 115 Celsius
Hard sugar: add 118 Celcius
Granulated sugar: add 125 Celsius
